RESUMO:

O campo da cachaça localizado no estado de Minas Gerais tem passado, nos últimos 40 anos, por um processo de mudança institucional marcado por diferentes modalidades de trabalho institucional. Este trabalho envolve a criação, manutenção e interrupção de instituições que podem ser compreendidas como elementos normativos, regulatórios e culturais que orientam as ações e práticas realizadas por um grupo de atores (indivíduos e organizações) que atuam em diferentes campos institucionais. Entre as modalidades de trabalhos institucionais realizados nesse campo destaca-se o trabalho de criação da padronização e certificação da cachaça de alambique. Os efeitos da criação desta instituição sobre as práticas constitutivas das estratégias de produção e mercado de micro destilarias de cachaça de alambique não foram pesquisadas. Por esta e outras razões, propõe-se este projeto de pesquisa que tem por objetivo investigar o trabalho institucional de padronização e certificação da cachaça de alambique, particularizando os efeitos deste trabalho sobre as práticas constitutivas das estratégias de micro destilarias de cachaça de alambique localizadas no Estado de MG. Mais especificamente, objetiva-se: a) resgatar os aspectos históricos do trabalho institucional de padronização e certificação, enfatizando as suas particularidades e orientações normativas, regulatórias e socioculturais. b) investigar os efeitos do trabalho institucional de padronização sobre as estratégias de produção e de mercado da cachaça de alambique. c) mapear e analisar as reações das micro destilarias produtoras de cachaça aos efeitos do trabalho institucional em foco. Para cumprir estes objetivos será formulada uma abordagem teórica que abrigará a teoria do institucional e a teoria da estratégia como prática. A abordagem metodológica a ser utilizada será a qualitativa.

The cachaça field located in the state of Minas Gerais has, in the last 40 years, gone through a process of institutional change marked by different modalities of institutional work. This work involves the creation, maintenance and interruption of institutions, which were defined as normative, regulatory and cultural elements that guide the actions and practices carried out by a group of actors (individuals and organizations) working in different institutional fields. Among the types of institutional work carried out in this field, the work of creating the standardization and certification of cachaça still stands out. The effects of the creation of this institution on the constitutive practices of the production and market strategies of micro still cachaça distilleries were not researched. For this and other reasons, this research project is proposed, which aims to investigate the institutional work of standardization and certification of still cachaça, particularizing the effects of this work on the constitutive practices of the strategies of micro still cachaça distilleries located in the state of MG. More specifically, the objective is: a) to rescue the historical aspects of the institutional work of standardization and certification, emphasizing its particularities and normative, regulatory and sociocultural guidelines. b) investigate the effects of institutional standardization work on the production and market strategies of cachaça de alembic. c) to map and analyze the reactions of micro distilleries producing cachaça to the effects of the institutional work in focus. In order to fulfill these objectives, a theoretical approach will be formulated that will house the institutional theory and the theory of strategy as practice. The methodological approach to be used will be qualitative.
